Segares Reserva 2012 is our winery's flagship wine, a wine for aging, made with care and patience, designed to convey the character of the vineyard, the delicacy of the grape, and the elegance of time. After years in the barrel and bottle, this wine reveals a deep complexity, roundness, and a personality that makes it timeless.

Winemaking
- Manual harvest with manual selection of bunches
- Partial destemming, controlled fermentation in stainless steel tanks.
- Natural malolactic fermentation in oak vats
- Minimal intervention, no aggressive clarifications, respecting the integrity of the fruit
Breeding
- Barrel: 24–30 months in medium-grain French oak (2nd and 3rd use), with gentle bâtonnage to gain volume and roundness.
- Bottle: Prolonged resting period before release, ensuring harmony and stability
Tasting notes
Deep garnet color with dark brick highlights. On the nose: ripe black fruit (plums, blackberries), notes of tobacco, leather, vanilla, and cocoa, against a complex mineral backdrop. Slight hints of sweet spices, cloves, and graphite.
Palate: powerful and structured, full-bodied, with ripe, silky tannins, balanced acidity, and an elegant, smooth mid-palate. Long, persistent finish with hints of ripe fruit, damp earth, and spices. Its aftertaste is enveloping, deep, and persistent.
Pairing
Perfect for roasted or stewed red meats, lamb, game stews, strong aged cheeses, wild mushrooms, hearty fall and winter dishes, and robust rice dishes.
Serving temperature: 17º–18ºC. Recommended decanting time of 30–45 minutes before serving to appreciate its full complexity.
