Vinification and aging
- Manual harvest with strict selection of bunches
- Partial destemming, careful fermentation in stainless steel tanks, with temperature control.
- Natural malolactic fermentation in oak vats
- Aging: 24–30 months in medium-grain French oak barrels (selected uses), followed by long bottle aging until optimal maturity.
Tasting notes
Deep garnet color with brick-red edges, typical of its evolution. The nose reveals a complex and elegant palette: ripe black fruit (prunes, blackberries, blueberries), aromas of tobacco, tanned leather, cocoa, sweet spices (vanilla, cloves), aged wood, and a mineral background. With air, hints of forest, damp earth, and truffle emerge, revealing its prolonged aging.
On the palate, it is full-bodied, structured, and silky smooth. Polished tannins, balanced acidity, and a velvety texture. Generous on the mid-palate, with volume, depth, and a very long, persistent finish full of nuances: ripe fruit, just the right amount of oak, spices, and minerality, inviting you to cellar it for a few more years or enjoy it slowly.

Recommended with grilled or stewed red meats, game stews, roast lamb, hearty winter dishes, wild mushrooms, mature cheeses, or artisan cured meats.
Serving temperature: 17–18°C — ideal to decant 30–45 minutes before serving to release its full complexity.
